- 1 ripe Avocado
- 2 Tbsps lemon juice
- 1 Red Bell pepper
- ½ Cucumber
- 4 Nori seaweed (18x18 cm (7x7 inches) from the Asian food shop)
- Wasabi
- 100 grams Gravlax
- 1 jar Trout roe (50 grams, 2 ounces)
- soy sauce
- pickled ginger

Preparation steps

Halve avocado, remove pit, peel and cut into thin slices. Peel bell pepper with a vegetable peeler, halve, remove seeds and white ribs and cut into wide strips. Peel cucumber and slice thinly.

Take one sheet Nori and cover with a thin layer of wasabi. Add a layer of sushi rice 1 cm thick (just under 1/2 inch). For the next layer, use several ingredients out of avocado, bell pepper, cucumber, gravlax and trout roe. Reserve some for the second set. Add a second layer of rice. Wet hands and press Nori sheet on top gently, smoothing out. Cut with a very sharp knife into 20 cubes. Repeat steps for second set of sandwiches, utilizing remaining ingredients. Serve sushi sandwiches with soy sauce and pickled ginger on the side.
