- 16 ozs skinless Salmon fillet (pin-boned)
- 2 Tbsps light soy sauce
- 2 Nori seaweed
- 1 cup cooked Sushi rice (cold)
- ¼ cup Rice wine vinegar
- Watercress (to garnish)

Preparation steps
1.
Slice the salmon lengthwise into thin strips. Season with soy sauce and chill until needed.
2.
Line a sushi mat with clingfilm. Lay a sheet of nori down and top with the cooked sushi rice. Season the rice with some rice wine vinegar.
3.
Top with sliced salmon and then use the sushi mat to help you roll the sushi. Chill as you prepare the other roll in the same fashion with the remaining ingredients.
4.
Using a sharp knife, cut the rolls into pieces and serve with a garnish of cress on top.
