4 ozs fresh goat cheese (a somewhat firmer variety)
3 heaping Tbsps Greek yogurt

Preparation steps

1.

Wash arugula, shake dry and chop very finely. Cut cress from the bed.

2.

Mix the fresh goat cheese, low-fat yogurt, arugula, and half of the cress with a tablespoon in a bowl. Season with salt and pepper.

3.

Form 10 small balls from the cream cheese mixture with moistened hands or a small ice cream scoop. Place in small paper cups and top with remaining cress.
