- 30 sugar-free Ladyfinger
- 1.333 cups cold Espresso
- 1 Tbsp dark Rum (optional)
- 1 unwaxed lemon (finely grated zest and juice)
- 1 ½ cups Mascarpone
- ¼ tsp Stevia (to taste)
- 1.333 cups plain Sugar-free dark chocolate
- 2 ½ cups Raspberries
Preparation steps
1.
Mix together the coffee and rum if using. Line the base of a 20cm|8"square dish with half the sponge fingers. Brush each sponge finger with half of the espresso coffee.

In a medium bowl, combine the lemon zest, lemon juice, mascarpone and stevia, mixing well to incorporate.
3.
Carefully spread 1/2 of the mascarpone over the sponge fingers in the dish.
4.
Coarsely grate half the chocolate and chop the rest into small chunks.
5.
Sprinkle about 2/3 of the chocolate over the mascarpone and top with raspberries, reserving some raspberries for the top.
6.
Arrange another layer of sponge fingers on top of the mascarpone and brush with the remaining espresso.
7.
Spread with the remaining mascarpone and sprinkle with the remaining chocolate and raspberries. Chill for at least 3 hours before serving.
