- 1 cup unsalted butter
- ⅓ cup honey
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour (plus extra for dusting)
- 18 ozs mixed Berry (blueberries, redcurrants, raspberries, strawberries)
- 4 Tbsps sugar-free raspberry jam (or sugar-free strawberry jam)

Preparation steps
1.
Beat together the butter, honey and vanilla in a mixing bowl until light and fluffy.
2.
Add the flour, 1 cup at a time, beating well after each addition. If the dough becomes too stiff, knead in the remaining flour by hand. Form into a ball, wrap in cling film and chill for 20 minutes.
3.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 12 muffin tins.

Roll out 3/4 of the dough about 5mm|1/4" thick. cut out rounds to fit the tins and line the tins.
5.
Place the berries in the pastry cases and place about 1 teaspoon of jam on top.
6.
Roll out the remaining dough and cut out rounds for the tops. Brush the edges with water and place on top of the pies, sealing the edges well. Cut a small slit in each pie.
7.
Bake for 15-20 minutes until lightly browned. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
