Ingredients

For the pastry
½ cup Almond flour
2 cups all-purpose flour (plus extra for dusting)
1 pinch salt
1 egg (beaten)
2 Tbsps coconut sugar
¼ cup cold unsalted butter (chopped)
For the filling
12 ozs Apple (peeled, cored and diced)
4 Tbsps sugar-free apricot Jam
1 tsp vanilla extract

Preparation steps

1.
For the pastry: combine the ground almonds, flour, salt, egg, sugar and chopped butter in a mixing bowl. Mix well, rubbing in the butter until a smooth dough forms. Wrap the dough in cling film and chill for 30 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4-6 individual tart or flan tins

Separate the dough into 4-6 portions.

Roll out the pastry on a floured surface and line the tins. Prick the pastry all over with a fork, line the pastry cases with non-stick baking paper and fill with rice or dried beans. Bake for 10 minutes.

Increase the oven temperature to 200°C (180° fan) 400°F gas 6.

Arrange the apples in the pastry cases.

Warm the apricot jam in a small pan until melted and spoon over the filling.
8.
Bake for 10-15 minutes until the apples are tender and the pastry is golden. Cool in the tins for a few minutes, then place on a wire rack to cool completely.
9.
Place a physalis on each tart.
