2 Zucchini (cut into long thin slices)
3 Tbsps olive oil
1 onion (finely chopped)
1 carrot (finely chopped)
1.333 cups ground Meat
1 egg yolk
2 Tbsps breadcrumbs
½ cup Parmesan (finely grated)
1 Tbsp Basil (finely chopped)

Preparation steps

1.
Finely dice the ends of the courgettes.
2.
Heat the oil in a skillet and fry the onion in 1 tbsp oil until transparent.
3.
Add the carrot and the diced courgette and gently fry for 1–2 minutes.
4.
Remove from the heat and let cool slightly. Mix together in a bowl with the meat, egg yolk, bread crumbs, Parmesan and basil. The mixture should be easy to shape. Season with salt and ground black pepper.
5.
Lay two courgette slices in a cross one over the other. Place the filling on top, fold over the courgette slices and hold in place with a wooden toothpick. Continue until all slices are used up.
6.
Fry the parcels in 2 tbsp oil for about 5–6 minutes.
