- 2 onions (chopped)
- 2 cloves garlic cloves (chopped)
- 1 yellow pepper (diced)
- 1 small Zucchini (diced)
- 1 small Fennel bulb (diced)
- 1 stale Bread roll
- 2 Tbsps olive oil
- 4 cups canned Tomatoes (chopped)
- 2 tsps dried oregano
- salt
- freshly ground Black pepper
- 1 ¼ cups Mozzarella (sliced)
- 2 cups ground Beef
- 2 cups ground Pork
- 1 egg
- 9 ozs dried cannellini beans
- butter (for the dish)

Preparation steps
1.
Heat the oven to 200C (180C fan) 400F, gas 6.
2.
Soak the bread roll in water.
3.
Heat the oil in a pan and cook half of the garlic and onion with the fennel until translucent.
4.
Add the tomatoes with their juice and 1 tsp oregano. Bring to the boil and simmer over a low heat for 15 minutes, until reduced slightly. Add the bell peppers and zucchini after 10 minutes and season with salt and pepper.
5.
Mix the pork and beef with the remaining onion, garlic and oregano, add the egg and squeezed-out bread roll. Season with salt and pepper.
6.
Fill the cannelloni tubes with the meat mixture, place in a greased baking dish and pour over the tomato sauce.
7.
Top with mozzarella slices and bake in the preheated oven for about 35 minutes.
