- 2 Tbsps Corn starch
- 1 ⅔ cups Cherry juice
- 1 Orange (juiced)
- 1 lemon (juiced)
- ½ tsp vanilla extract
- ⅓ cup sugar
- ½ Cinnamon stick
- 2 Cardamom (crushed)
- 4 cups Sour cherry (e. g. morello cherries, drained and pitted)
- ⅛ cup cassis

The compote will keep for at least 2 weeks when stored in a cool, dark place.
Preparation steps
1.
Mix the corn flour with 3-4 tbsp of cherry juice. Place the remaining cherry juice, orange juice, lemon juice, vanilla extract, sugar, cinnamon stick and the cardamom in a pot and bring to the boil.

Stir in the corn flour mixture and stir for a few minutes, stirring continuously, until the mixture thickens.
3.
Stir in the cherries and the cassis, bring to the boil (remove the spices if you wish) and then transfer the compote to jar. Close tightly and leave to cool.
