1 shallot (peeled and chopped)
1 clove garlic cloves (peeled and minced)
½ cup black Olives (pitted and chopped)
1 Tbsp fresh thyme (chopped)
1 Tbsp fresh rosemary (chopped)
1 Tbsp fresh Basil (chopped)
1 tsp fresh lemon zest
1 Tbsp Pine nuts (chopped)
2 Tbsps Parmesan (freshly grated)
4 cups ripe, red Plum
2 Tbsps butter
2 Tbsps brown sugar

Preparation steps

Preheat oven to 375º F. Lightly coat a baking dish or pan with olive oil.

Rinse the chicken under cold running water and pat dry with paper towels. Season chicken with salt and pepper on both sides. Heat 2 tablespoons olive oil in a skillet set over medium-high heat. Sear the chicken breast for about 2 minutes on each side, or until golden brown. Remove chicken from skillet and transfer to baking dish.

In a medium bowl, combine the shallots, garlic, olives, thyme, rosemary, basil, lemon zest, pine nuts, and Parmesan cheese. Toss to blend. Drizzle 2 tablespoons olive oil into the herb mixture and mix well. Spread herb mixture over the chicken and cook in preheated oven for about 25 to 30 minutes, or until the juices run clean and the chicken is cooked through.

Meanwhile, rinse the plums. Cut the plums in half, using a sharp knife. Remove the pit and cut into wedges. Melt the butter in a skillet set over medium heat, add the plum slices, sprinkle with brown sugar and cook until tender and caramelized.

Place the caramelized plums on a serving platter. Slice the chicken and arrange artfully on top of the plums. Serve.
