- 4 garlic cloves
- 3 Tbsps butter
- 3 Tbsps olive oil
- 4 bay leaves
- 8 slices Serrano ham
- 4 Entrecote (each about 180 grams)
- salt

- 50 milliliters Vegetable broth
- 50 milliliters dry white wine
- 2 Tbsps lemon juice
- sugar
- 4 Lemon wedge
Preparation steps
1.
Peel garlic, halve 2 cloves and slice remaining cloves. Heat butter and oil in a pan and saute garlic slices, bay leaf and ham for a few minutes. remove from the pan.

Rub sirloin steaks with garlic halves, season with salt and pepper. Heat oil in a pan and cook for about 3 minutes per side. Wrap in aluminum foil and let rest. Add broth, wine and lemon juice to the pan. Season with salt, pepper and sugar. Simmer for a few minutes.

Return sirloin steaks to the sauce and heat briefly. Arrange with ham slices and lemon wedges on plates. Serve.
