2 Steak such as Lende, each about 200-250 grams / 2 cm thick (approximately 7-9 ounces / 1 inch thick)
freshly ground pepper
2 Tbsps olive oil
salt
300 grams starchy potatoes
50 milliliters Whipped cream
2 Thai eggplant
1 small head Radicchio
2 Tbsps Balsamic glaze
1 tsp sugar
2 Tbsps vegetable oil
Nutmeg
Sea salt
Herb butter
Fresh herbs (for the garnish)

Preparation steps

1.

Rinse the potatoes and cook in salted water for about 30 minutes.

2.

Sprinkle the meat with the coarsely ground pepper on both sides. Sear the meat in oil, in a grill pan, on both sides, for about 2 minutes on each side. Wrap in aluminum foil and place in the oven at 80°C (approximately 175°F).

Rinse the eggplant and cut into slices. Rinse the radicchio, cut in half and remove the leaves from the stalk. Fry both in oil on all sides. Deglaze with balsamic vinegar and sprinkle with sugar to caramelize.

4.

Drain the potatoes, squeezing out excess water. Heat the cream and stir into the potatoes. Season with salt, pepper and nutmeg.

5.

Serve all ingredients on warmed plates, sprinkled with sea salt and garnished with herb butter and herbs.
