- 4 large eggs
- 1 ½ cups caster sugar
- ⅔ cup unsalted butter (melted)
- ½ tsp vanilla extract
- 1 ¼ cups all-purpose flour
- 1 tsp ground cinnamon
- ¾ cup cocoa powder
- ⅔ cup finely chopped Walnut
- For the topping
- 1 ¾ ozs Dark chocolate (70% cocoa solids)
- ¼ cup unsalted butter
- 2 Tbsps milk
- 2 Tbsps cocoa powder
- 1 cup powdered sugar
- To decorate
- white chocolate (stars)
Preparation steps

Heat the oven to 160°C (140° fan) 325°F gas 3. Butter a 23cm|9" square tin and line the base with non-stick baking paper.

Whisk the eggs in a mixing bowl until light and frothy, then whisk in the sugar. Slowly add the melted butter, whisking constantly until blended. Whisk in the vanilla.

Sift in the flour, cinnamon and cocoa and gently stir into the mixture until combined, then stir in the nuts.

Put into the tin, level the surface and bake for about 25 minutes, until firm to the touch. Insert a skewer or wooden cocktail stick into the centre - it will come out clean when the cake is cooked. Cool in the tin.

For the topping: melt the chocolate and butter in a large heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and stir in the milk.
6.
Sift in the cocoa and icing sugar and mix until thick and smooth. Spread over the cake in the tin and leave to set.
7.
Cut into pieces and decorate with white chocolate stars.
