Stacked Sandwich Trio

- 4 slices Whole Wheat Toast
- 1 Tbsp Herb butter
- 100 grams turkey breasts (smoked, sliced)
- 3 Tbsps Red Bell pepper
- 2 Tbsps mixed, coarsely chopped Fresh herbs

- 4 hard-boiled eggs
- 1 Tbsp Mayonnaise
- 1 tsp lemon juice
- 1 generous pinch Mustard

- 8 slices Multigrain bread
- 50 grams Arugula
- 1 Tbsp Lobster butter
- 100 grams Garlic shrimp (cooked, ready to eat)
Preparation steps
For the turkey sandwich, spread herb butter thinly over two slices of whole wheat bread and cover each with turkey slices and sprinkle with diced bell pepper and mixed herbs. Season with salt and pepper and top each with remaining two slices of bread.
For the egg salad sandwich, rinse lettuce and spin dry and tear or cut into pieces. Peel hard-boiled eggs and cut 2 eggs into slices and separate 2 eggs. Mix 2 yolks, mayonnaise and lemon juice and season with mustard, salt and pepper. Finely chop 2 egg whites and stir into egg yolk mixture. Spread two slices of bread spread with egg mixture and top with egg slices, spread lettuce over egg salad and cover each with two slices of bread.
For the garlic shrimp sandwich, rinse arugula and spin dry and tear into pieces. Spread lobster butter thinly over two slices of bread and place drained garlic shrimp over butter and spread arugula over shrimp and top with remaining two slices of bread. Cut six sandwiches diagonally into triangles. Stack shrimp salad and egg salad sandwich triangles and top with a turkey sandwich triangle and secure with a decorative toothpick and serve.
