Ingredients

For the biscuits
½ cup unsalted butter
½ cup caster sugar
1 egg (lightly beaten)
1 tsp vanilla extract
2 cups all-purpose flour
For the icing
4 cups powdered sugar
2 Tbsps water
pink and green Food coloring
1 ⅛ cups yellow Sugar paste
To decorate
small, colored Candy
2 Tbsps Apricot Jam (jelly)
1 tube lilac piping icing
1 tube brown piping icing
1 tube yellow piping icing

Preparation steps

1.
For the biscuits: heat the oven to 190°C (170° fan) 375°F gas 5. Line a large baking tray with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until soft and creamy. Gradually beat in the egg and vanilla. Add the flour and mix to a dough.

Roll out the dough on a lightly floured surface to a thickness of 1 cm|1/2". Using shaped cookie cutters (rabbit, chick, lamb) cut biscuits out of the dough and place on the baking tray. Cut out oval shapes for the 'eggs'.

Bake for 8-10 minutes, until pale golden brown. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.

For the icing: sift the icing sugar in to a bowl and stir in the water until thick and spreadable. Divide the icing between 3 bowls. Colour 1 bowl pink, another pale green and leave 1 larger bowl white.
6.
Spread the icing on the lamb, rabbit and egg shaped biscuits. Place a sweet on each rabbit for the 'eyes' and leave to set.
7.
Decorate the egg shaped biscuits with small sweets and leave to set.
8.
To decorate: brush the chick biscuits with the warmed jam.
9.
Roll out the yellow sugarpaste on a surface lightly dusted with icing sugar and cut into chicks, the same size as the biscuits. Press onto the chick biscuits. Press a sweet for the 'eye' into each chick.
10.
Place the remaining icing into separate piping bags and pipe dots on the lamb biscuits, whiskers and ears on the rabbit biscuits and 'feathers' on the chicks. Pipe the egg shaped biscuits with lines of contrasting icings.
11.
Use the piping icing tubes to pipe a ribbon tie on the chicks, details on the lamb biscuits and dots and wavy lines on the egg shaped biscuits. Leave to set.
