Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line a baking tray with non-stick baking paper.
2.
Beat the butter and sugar together in a mixing bowl until light. Beat in the egg and vanilla, a little at a time, until well combined.
3.
Stir in the flour until the mixture comes together as a dough. Roll out the dough out on a lightly floured surface to a thickness of 1cm|1/2". Using Halloween cookie cutters, (or a template) cut out pumpkin, cat and bat shapes and place on the baking tray.
4.
Bake for 8-10 minutes until pale golden. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.
5.
For the icing: sift the icing sugar into a mixing bowl and stir in enough water to create a smooth mixture. Divide into 3 smaller bowls and stir in the food colourings.
6.
Carefully spread most of the icing onto the biscuits and leave to set.
7.
Spoon the remaining icing into separate small piping bags and pipe faces, lines, etc. onto the biscuits.
