- 1 onion
- 1 garlic clove
- 2 carrots
- 250 grams Celery
- 250 grams Leeks
- 150 grams brown button Mushroom
- 2 Tbsps butter
- 1 l Vegetable broth
- 300 grams yellow Split pea
- 2 sprigs Savory
- 2 sprigs thyme
- 2 sprigs oregano
- 1 bay leaf
- salt
- freshly ground peppers
- 1 Tbsp white balsamic vinegar
- thyme (for garnish)

Preparation steps
1.
Peel and finely chop the onion and garlic. Peel the carrots and celery and chop both into small cubes. Rinse and trim the leek and cut into rings. Trim the mushrooms and cut into quarters.

Heat the butter in a large pot and sauté the vegetables for about 5 minutes. Pour in the broth and add the peas.
Rinse the herbs, shake dry, tie with kitchen string and add along with the bay leaf to the soup. Simmer for about 1 hour.

Purée everything together with a blender. For the desired consistency, add more broth if necessary or allow to simmer for a short while longer.
4.
Season with salt, pepper and vinegar and serve garnished with thyme.
