350 grams Arborio rice
1 white onion
500 grams fresh Spinach
5 Tbsps olive oil
6 Tbsps grated Parmesan
salt
freshly ground peppers
2 Tbsps lemon juice
1 l Chicken broth
1 Tbsp butter

Preparation steps

Rinse spinach and drain. Heat a little oil in a large pot. Add spinach and cover. Cook over medium heat and then set aside.

Peel and finely chop the onion. Heat the olive oil and sauté the onion with the rice until translucent. Add a good helping of hot broth and the lemon juice. Bring to a boil. Once the liquid has evaporated, top up with more broth so that the rice is just covered. Lower heat to a simmer and keep adding broth as needed, stirring almost constantly. Hot water may be added if needed also. Stir in butter and Parmesan. Then season with salt and pepper. Fold in the spinach and serve immediately.
