- For the main dish
- 1 kilogram Spinach
- 1 Tbsp butter
- 1 garlic clove
- 1 Tbsp Pastry flour
- 150 milliliters strong Vegetable broth
- 100 grams Whipped cream
- salt
- freshly ground peppers
- Nutmeg
- 1 Tbsp lemon juice
- 100 grams Gruyere (grated)
- butter (for greasing)

Preparation steps
1.
For the main dish, rinse the spinach and blanch in salted water. Drain, rinse, drain again and chop coarsely.
Grease 4 small or 1 larger casserole dish.

Sauté the crushed garlic in butter. Stir in the flour and pour in the broth and cream. Boil for about 5 minutes.
Simmer, stirring occasionally, and season with salt, pepper, nutmeg and lemon juice.

Pour the sauce over the spinach and shower with cheese.
Bake in a preheated oven at 220°C (approximately 425ºF) for about 6 minutes until the cheese begins to crisp.
4.
Serve with a fried egg on top.
