500 grams Spinach
1 onion
2 garlic cloves
1 Tbsp olive oil
salt
freshly ground peppers
Nutmeg
2 eggs
80 grams lean ham (thinly sliced, or turkey breast)
4 Filo dough (200 grams or 7 ounces)
50 grams melted butter (for brushing)
fresh Spinach (for garnish)

Preparation steps

Rinse spinach and drain well. Saute over low heat, then press into a colander and drain. Peel and mince onion and garlic. Heat oil in a pan and cook onions and garlic. Add spinach and season with salt, pepper and nutmeg. Remove from heat and let cool.

Whisk eggs and stir into spinach. Cut ham into strips, about 2 cm (approximately 1/2 inch) wide.

Preheat oven to 200°C (approximately 400°F).

Unroll filo and brush with melted butter. Top with another piece of filo and brush with butter and season with salt. Repeat with another layer of filo. Top filo with spinach mixture and leave a 4 cm (approximately 1 1/2 inch) wide margin around the edges. Top with ham and another shet of filo. Brush pastry with butter, sprinkle with salt, fold in quarters roll up.

Place strudel on a baking sheet lined with parchment paper and brush with remaining butter. Bake for about 40 minutes. Remove from oven and let set briefly. Slice and serve garnished with remaining spinach.
