- ⅔ cup brown sugar
- 1 egg (beaten)
- 1 ¼ cups all-purpose flour
- 1 tsp Baking powder
- ½ tsp ground cinnamon
- ½ tsp grated Nutmeg
- 1 Orange (finely grated zest)
- ⅓ cup whole unsalted Peanuts
- ¾ cup unsalted Peanuts (roughly chopped)
- ¾ cup Oats

1 Skillet, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Lid, 1 Citrus juicer
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a large baking tray with non-stick baking paper.
2.
Beat the butter and sugar in a mixing bowl until creamy and then stir in the egg.
3.
Mix the flour, baking powder, cinnamon, nutmeg and orange zest together and stir into the butter mixture. Stir in the whole peanuts, 60g|1/2 cup of the chopped peanuts and the oats.
4.
Take teaspoons of the mixture and shape into round balls. Place the balls on the baking tray, well apart and sprinkle with the remaining peanuts.
5.
Bake for 15 minutes until golden. Cool on the baking tray for 5 minutes then place on a wire rack to cool completely.
