- 1 cup cream cheese
- 1 cup butter
- 4 eggs
- ½ cup Maple syrup
- 1 cup Pumpkin puree
- 1 tsp vanilla extract
- 1 cup xylitol
- 2 tsps Baking powder
- ¼ tsp salt
- 2 tsps ground cinnamon
- 1 tsp Mixed spice
- 3 cups very finely ground almonds
- 1 cup chopped Walnut (or pecans)
- xylitol (for dusting)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 25cm|10” Bundt tin and dust with a little flour.
2.
Whisk together the cheese, butter, eggs, maple syrup and vanilla in a mixing bowl until blended.
3.
Mix together the dry ingredients and gently fold into the cheese mixture.
4.
Pour into the tin and bake for 50-60 minutes, until a skewer inserted into the centre comes out clean. Cool in the tin on a wire rack for 15 minutes, then place on a wire rack to cool completely.
5.
Dust with xylitol.
