Ingredients

For the spaghetti and pesto
40 grams Cashews
500 grams Spaghetti
salt
1 garlic clove (peeled)
2 handfuls cilantro
6 Tbsps sesame oil (mild)
2 Tbsps freshly grated Parmesan
1 splash lemon juice
freshly ground peppers
For garnish
40 grams Parmesan

Preparation steps

1.

For the spaghetti and pesto, toast cashew nuts in a dry pan briefly, then allow to cool.

Cook the spaghetti in boiling salted water until al dente.

Peel the garlic. Rinse the cilantro, shake dry and puree with garlic, nuts, oil, grated Parmesan and a little pasta cooking water to a creamy pesto. Season with lemon juice, salt and pepper.

4.

Drain spaghetti and divide among plates. Pour the pesto over and top with grated Parmesan. Serve with garnished with cilantro leaves.
