800 grams (approximately 28 1/2 ounces) lamb from the leg (ready to cook parried)
2 red Bell pepper
2 garlic cloves
1 lemon (juice)
2 Tbsps freshly chopped Fresh herbs (Thyme and oregano)
100 milliliters (approximately 3 1/2 ounces) olive oil (plus more for grill grates)
Sea salt
freshly ground peppers

Preparation steps

Rinse the lamb, pat dry and cut into cubes about 2 cm (approximately 3/4-inch). Rinse, halve, and remove seeds and ribs from the peppers, and cut into bite-size pieces. Alternately thread the meat and peppers onto metal skewers and lay side by side in a shallow dish or on a baking sheet.

For the marinade, peel the garlic and thinly slice. In a bowl, whisk together garlic, lemon juice, herbs and oil. Drizzle over the skewers, cover and refrigerate at least 2 hours.

Prheat the grill to medium and lightly oil the grates. Lift the skewers from the marinade and grill, brushing with marinade and turning the skewers as they cook, until brown all over, about 15 minutes. Sprinkle with sea salt and pepper, remove from grill and serve.
