- For the base
- 1 ½ cups Biscuit (oat)
- ¼ cup unsalted butter (melted)
- For the filling
- 3 eggs (separated)
- ½ cup caster sugar
- 1 unwaxed lemon (finely grated zest)
- 3 ⅓ cups Quark
- 6 leaves gelatin (cut into strips)
- 3 Tbsps hot water
- To decorate
- Raspberries
- Blueberries
- Blackberry
- powdered sugar
- crisped rice white Chocolate (cut into pieces)

Preparation steps
1.
Butter a 20 cm|8" springform tin. Stir together the biscuit crumbs and melted butter. Press into the base of the tin and chill.
2.
For the filling: whisk together the egg yolks, sugar and lemon zest until thick and pale.
3.
Add the quark and whisk until smooth. Leave to stand for 15 minutes.
4.
Soak the gelatine in about 2 -3 tbsp cold water in a small bowl or cup for 5 minutes.
5.
Pour over the hot water and stir until the gelatine has dissolved.
6.
Whisk the quark mixture and gradually stir 3 tablespoons into the gelatine. Gradually stir into the quark mixture.
7.
Whisk the egg whites until stiff and gradually fold into the quark mixture.
8.
Carefully pour onto the base and smooth the surface. Cover and chill overnight.
9.
Place the cake on a serving plate and decorate the top with berries. Sift icing sugar over the top. Arrange the chocolate pieces around the sides of the cake.
