- 4 sheets white gelatin
- 1 egg yolk
- ⅓ cup sugar
- ½ Vanilla bean (seed scrapped out)
- ½ cup Yogurt
- 1 cup Quark
- ½ cup cream (at least 30% fat)
- 1 ⅔ cups Raspberries
- mint (to garnish)

Preparation steps
1.
Soak the gelatine in cold water for 10 minutes.
2.
Mix together the egg yolk, sugar and the vanilla seeds until creamy. Alternately stir in the yogurt and the quark.
3.
Wring out the gelatine and dissolve in a pot with 2 tbsp water (do not boil, just heat).
4.
Mix 3 tbsp of the quark mixture into the gelatine and then quickly mix the gelatine mixture into the quark mixture. Leave to chill.
5.
Whip the cream until stiff and as soon as the quark mixture begins to set, stir in the cream and pour the mixture into moulds rinsed in cold water. Chill for at least 2 hours.
6.
Once set, knock the mousse out of the moulds and arrange on plates with the strawberries. Serve garnished with mint.
