1 unwaxed lemon (finely grated zest and juice)
1 teaspoon vanilla extract
1 cup xylitol (scant)
½ cup Corn starch
2 ½ cups Quark
1 ½ cups cream (48% fat)
4 large eggs
2 ½ cups Blueberries

Preparation

1 Fine-mesh sieve, 1 Measuring cups, 1 Citrus juicer, 1 Tablespoon, 1 Silicone spoon

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a deep 23cm|9" sprinform cake tin.
2.
Mix together the butter and biscuit crumbs and press into the base of the tin.
3.
Bake for 10 minutes, then set aside to cool completely.

Beat together the lemon zest and juice, vanilla, xylitol, cornflour, quark and cream.
5.
Add the eggs, whisking until the mixture is smooth, then stir in the blueberries.
6.
Pour onto the base and tap the tin lightly to settle the mixture evenly into the tin. Wrap the outside of the tin in a double thickness of foil.
7.
Place the tin in a roasting tin containing 2cm|1" hot water.
8.
Bake for 75--90 minutes, until the cheesecake is golden-brown and just set.
9.
Turn off the oven and leave the cake to cool completely in the oven.
