- ½ cup butter
- 2 cups Almond flour
- ¾ cup honey
- ½ tsp salt
- 1 tsp Almond extract
- 1 cup cream cheese
- 1 cup Ricotta cheese
- 2 eggs (beaten)
- 3 Tbsps Corn starch
- 1 cup chopped Dried fig (ready to eat)
- 3 fresh Figs (sliced)
- To decorate
- powdered sugar

Preparation steps
1.
Heat the oven to 190°C (170° fan )375°F gas 5. Butter a 23cm|9" springform tin.
2.
Beat together the almonds, butter, 1 teaspoon honey, salt and 1/2 tsp almond extract. Press into the base of the tin.
3.
Beat together the cheeses, honey, remaining almond extract and cornflour until smooth.
4.
Mix in the eggs until smooth. Stir in the chopped figs.
5.
Pour into the tin and arrange the sliced figs on top, pressing them gently into the mixture.
6.
Bake for 35-45 minutes until set. Chill overnight.
7.
Cut into slices to serve and sift a little icing sugar over the top.
