- 2 cups flour
- 2 Tbsps Yeast
- 1 tsp Dried yeast
- ½ cup lukewarm milk
- butter (to grease the cases)
- 1 egg
- 3 Tbsps olive oil
- 1 Tbsp fresh Fresh herbs (thyme and rosemary, chopped)
- ½ cup goat's milk cream cheese
- crushed Red pepper flakes

Preparation steps
1.
Sieve the flour into a bowl. Create a well in the middle and place the yeast in the well. Stir in a pinch of sugar and 4-5 tbsp lukewarm milk. Cover and leave to rise for around 20 minutes.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease the muffin cases.

Add the egg, oil and the herbs to the dough and gradually add the remaining milk. Knead into a smooth dough that comes away from the bowl easily. If necessary use a little more milk. Stir in the cream cheese and season with salt and ground black pepper.
4.
Shape into 6 small balls and place them in the cases. Sprinkle with chilli and leave to rise again for 20 minutes. Bake for around 25 minutes until golden brown.
