- 200 grams small button Mushroom
- 50 grams Bacon (in slices)
- 1 Tbsp butter
- salt
- freshly ground peppers
- 1 handful Chives
- butter (for the ramekins)
- 350 milliliters Whipped cream
- 2 eggs
- Leeks (for garnish)

Preparation steps

Preheat the oven to 160°C (325°F) convection. Clean mushrooms and cut into slices. Finely dice the bacon. Heat the butter in a pan and cook the mushrooms for about 6 minutes until slightly browned along with the bacon. Season with salt and pepper, and set aside.

Rinse the chives, pat dry and cut into small rolls. Butter 4 ramekins (6-8 cm diameter, approximately 2 1/2-3 inches). Mix the pan contents with the chives and pour into the ramekins.

Whisk the cream with the eggs; season with salt and pepper. Fill the ramekins with mixture, cover with aluminum foil, place in a hot water and cook about 45 minutes in the oven. To serve garnish with chives.
