- 6 large Red onions (sliced)
- 1 red chili pepper (seeded and diced)
- 2 Tbsps olive oil
- 1 cup soft light brown sugar
- ⅔ cup balsamic vinegar
- ½ cup Red wine vinegar
- salt
- freshly ground peppers

Preparation steps
1.
Combine the red onions, chilli, olive oil, sugar, and vinegars in a slow cooker.
2.
Cover with a lid and cook on a low setting for 8 hours until thick and jammy, stirring from time to time.
3.
Season to taste with salt and pepper before leaving to cool. Spoon into sterilised jars and chill before serving.
