- 2 Tbsps honey
- 2 Tbsps vegetable oil
- 1 Tbsp sweet paprika
- 2 tsps coarse salt
- 18 ozs Pork shoulder (crackling joint)
- 2 large onions (sliced into rings)
- 2 cloves garlic cloves
- 1 Tbsp vegetable oil (for the roasting tin)
- ⅜ cup dark beer
- 1 cup Meat stock
- 2 sprigs parsley (leaves roughly chopped)
- 4 slices rustic Country bread (large loaf)
- To serve
- Ketchup
- Mayonnaise

Preparation steps

Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Whisk together the honey, oil, paprika, salt and a little ground black pepper and rub the mixture into the meat, all over. Put the onions and garlic in a roasting tin and place the meat on the onions, fat side down. Pour in 200 ml water and cook in the oven for around 20 minutes.

Reduce the oven temperature to 160°C (140°C in a fan oven) 325°F, gas 3. Turn the meat over and score a diamond pattern into the fat. Pour in the beer and stock and cook for a further 1 1/2 hours.
4.
Take the meat out of the roasting tin and cut into slices. Arrange the meat on top of the slices of bread and serve sprinkled with parsley, with ketchup and mayonnaise on the side.
