2 Eggplant
4 Basil
4 cloves garlic cloves

Preparation steps

1.
Pre-heat the oven to 200°C | 400F | gas 6.
2.
Rinse, dry and thinly slice the aubergines lengthwise, keeping them attached at the stalk end.
3.
Place on an oven tray covered with greaseproof paper. Season and generously pour olive oil. Put in the oven and cook for 35 minutes.
4.
In the meantime, rinse, dry and remove the basil leaves. Peel the garlic and slice thinly. Heat a centimetre of oil in a saute pan.
5.
When the oil is hot, fry basil leaves a few seconds by small quantities. Drain on kitchen paper. Do the same for the garlic.
6.
Remove the aubergines from the oven and put on a plate. Sprinkle with fried garlic and basil. Serve immediately.
