- 1 shallot (diced)
- 1 red chili pepper (chopped)
- ½ tsp finely chopped Coriander
- ½ tsp chopped Lemongrass (white part only)
- ½ tsp Cumin
- ½ tsp Coriander
- ½ tsp ground Turmeric
- 2 cups Snap pea
- 2 Tbsps Nut oil
- 2 cups King prawn (deveined and peeled, apart from the tail segment)
- snipped fennel fronds (to garnish)

Preparation steps
1.
In a mortar, finely grind the shallot, chilli, coriander root, lemongrass, cumin, coriander seeds and turmeric.
2.
Blanch the mange tout in salted water for around 1 minute, rinse in cold water and drain.
3.
Heat the oil in a wok and fry the curry paste briefly. Add the prawns and fry for around 2 minutes. Stir through the mange tout and season to taste with salt. Serve sprinkled with fennel tops.
