2 ⅔ cups ground lamb
2 scallions (finely chopped)
2 green chili peppers (deseeded and finely chopped)
1 chopped cilantro
1 tsp salt
1 tsp peppers
5 Tbsps Oil
2 onions (finely sliced)
2 cloves garlic cloves (finely chopped)
fresh ginger (peeled and grated)
2 tsps Garam Masala
1 tsp Coriander (crushed)
1 tsp Cumin (crushed)
1 cup canned Tomatoes (chopped)
To serve
1 ⅔ cups Couscous (cooked according to packet instructions)

Preparation steps

1.
Mix the lamb with the scallions, chile peppers, cilantro, salt and pepper and shape into meatballs.
2.
Heat 3 tbsp oil in a wide skillet and fry the meatballs until browned all over. Remove from the skillet and set aside.
3.
Heat the remaining oil in the skillet and fry the onions until soft but not brown. Add the garlic, ginger, garam masala, coriander, and cumin seeds and fry for 2 minutes.
4.
Return the meatballs to the pan and add the tomatoes and about 1/2 cup water. Simmer very gently for 20 minutes or until the meatballs are cooked through. Season with salt and pepper.
5.
Serve with the couscous and garnish with the cilantro.
