1 Orange
1 large, red Cabbage
4 sprigs flat-leaf parsley
3 sprigs Chervil
1 sprig cilantro
1 sprig Tarragon
1 pinch ground Cumin
3 Tbsps sunflower oil
1 Tbsp Sherry vinegar
salt

Preparation steps

1.
Peel and juice the orange. Reserve the orange peel.
2.
Wash and thin out the herb leaves. Chop together finely.
3.
Drop the peel into boiling water for one minutes, then drain and put them to one side for later.
4.
Shred the cabbage and plunge it into boiling water for one minute. Drain and place into a salad bowl. Stir in the chopped herbs.
5.
Sieve the orange juice to remove the pith and any seeds.
6.
Blend the orange juice with the sunflower oil, ground cumin sherry vinegar and some salt and pepper and then pour over the cabbage and herbs. Serve as a delicious accompaniment to a winter meal.
