Ingredients

For the cake
¾ cup unsalted butter
¾ cup caster sugar
2 eggs (beaten)
½ cup Almond flour
1 ¼ cups self-rising flour
vanilla extract
12 ozs Gooseberry
For the crumble
1 cup all-purpose flour
0.333 cup butter
2 Tbsps caster sugar
water
4 Tbsps Apricot Jam (jelly)

Preparation steps

1.
For the cake: heat the oven to 160°C (140° fan) 325°F gas 3. Grease a deep 18cm|7" square cake tin and line the base with non-stick baking paper.

Beat the butter and sugar in mixing bowl until pale and fluffy. Gradually beat in the eggs.
3.
Fold in the ground almonds and flour, then stir in the vanilla.
4.
Spread the mixture in the tin and scatter the gooseberries on top, pressing them down a little.
5.
For the crumble: put the flour into a bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and a little water until the mixture sticks together in small crumbs. Sprinkle the crumble evenly over the gooseberries.
6.
Bake for 60-70 minutes until golden. Gently warm the jam and brush or drizzle over the hot cake. Cool in the tin and cut into squares to serve.
