1 cup warm milk
4 ½ cups white Bread flour
1 sachet easy blend Yeast
1 tsp salt
¼ cup caster sugar
¼ cup unsalted butter (melted)
½ cup soft cream cheese
1 egg yolk (beaten)
24 raisins

Preparation steps

Soak the saffron in the milk for 10 minutes.

Mix together the flour, yeast, salt and sugar in a mixing bowl and make a well in the centre. Stir the melted butter into the milk and saffron mixture and pour into the well. Add the cheese and mix to a dough. Knead on a floured surface until smooth, then place in a greased bowl, cover with oiled clingfilm and leave to rise in a warm place for 1 1/2-2 hours until well risen.

Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a large baking tray.

Knead the dough lightly on a floured surface and divide into 12 pieces. Roll each into a rectangle about 20cm|8" long. Twist each into an 'S' shape and place on the baking tray. Cover loosely and leave for 30-45 minutes until well risen.
5.
Brush the rolls with the egg yolk, then place one raisin in the centre of each circle (2 raisins per roll). Bake for about 15 minutes, until golden brown on top. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
