- 200 grams Spinach
- salt
- 250 grams Mozzarella
- 250 grams Pastry flour
- 1 tsp Baking powder
- 2 garlic cloves
- 3 pickled Asparagus
- 200 grams Yogurt (0.1% fat)
- 2 eggs
- 80 milliliters olive oil
- freshly ground peppers
- Nutmeg
Preparation steps

Preheat the oven to 180°C (approximately 350°F). Line a muffin tin with paper liners.

Rinse and blanch spinach in salted water. Shock in ice water, drain and coarsely chop. Drain and dice mozzarella. Combine flour and baking powder. Peel and mince garlic. Drain and dice asparagus.

Combine yogurt, eggs, oil and garlic, then stir in flour. Stir in cheese and season with salt, pepper and nutmeg.
Divide dough in half and fold asparagus into one half. Fold spinach into the other half. Pour both doughs into liners and bake for 25-30 minutes, until golden brown. Remove, let cool briefly, release from tin and serve warm or cooled.
