Sausage and Vegetables on Baguette
- 4 Sausage (grill sausages or Italian salsiccia)
- 2 medium sized zucchini
- 1 small Eggplant
- 6 sun-dried tomatoes (packed in oil)
- 1 yellow Bell pepper
- 1 small, red chile pepper
- 2 garlic
- 1 small, white onion
- freshly ground peppers
- 1 bunch fresh Basil
- cold pressed olive oil
- 4 Baguette
For the vegetables: Rinse and trim the zucchini, and cut into thin sticks and small cubes. Rinse the eggplant and cut into small cubes. Rinse the bell peppers, cut in half lengthwise, remove seeds and white ribs, and cut into tiny cubes. Rinse the chile pepper and finely chop. Peel and finely chop the garlic and onion.
Heat 4 tablespoons of the olive oil in a skillet. Add the chile pepper, onion and garlic, and cook until translucent. Stir in the remaining vegetables and cook over medium heat until soft.
Drain the sun-dried tomatoes and cut into strips. Stir into the vegetable mixture. Season with salt and pepper to taste, and 1 teaspoon of sugar.
For serving: Slice the bread and toast on both sides in the oven. Grill the sausages or cook in a skillet with some fat. Serve the sausages on the bread with the vegetables. Garnish with the basil.
