- 2 shallots
- 1 garlic clove
- 1 red Bell pepper
- 1 yellow Bell pepper
- ½ orange Bell pepper
- 150 grams green Asparagus
- 2 Tbsps Canola oil
- 4 Sausage
- 2 Tbsps olive oil
- salt

- 1 tsp chopped thyme
- 4 Baguette
- 4 tsps medium hot Mustard

Preparation steps
1.
Peel the shallots and the garlic, cut the shallots into strips and finely chop the garlic. Rinse and trim the bell peppers and cut into narrow strips. Rinse and drain the asparagus, cut off the ends and chop the spears into 4 cm long pieces (approximately 1 1/2 inches).
Heat the canola oil in a pan and fry the sausages until browned.
Heat the olive oil in a second pan and sauté the shallots and garlic in it. Add the vegetables and fry everything, while stirring, for about 8 minutes. Season with salt, pepper and thyme.
Slice open the baguettes. Lay a sausage in each one, spread some mustard over it and top with the vegetables.
Serve immediately.
