- 14 ozs smoked polish sausage
- 8 fresh eggs (lightly beaten)
- 1 ½ cups heavy whipping cream
- 1 ½ tsps Dry mustard
- salt (to taste)
- freshly ground Black pepper (to taste)
- 2 cups shredded Cheddar cheese (divided)
- 1 cup sliced green olives
Preparation steps

Preheat oven to 350° F / 180º C. Generously grease an oven-proof baking dish with butter or non-stick cooking spray.

Cut sausage into 1/4-inch /.64 cm rounds; set aside. In a large bowl, combine eggs, cream, dry mustard, salt and black pepper; whisk until smooth. Stir in sausage, 1 1/2 cups of cheese and green olives. Pour egg mixture into prepared baking dish.

Bake 40 to 45 minutes or until eggs are set. Sprinkle with remaining cheese. Let stand 5 minutes before slicing and serving.
