250 milliliters Fruit Vinegar
2 onions
3 Tbsps Spice mix
2 Tbsps brown Candy
1 kilogram Beef (such as shoulder)

125 milliliters Vegetable broth
50 grams gingerbread Cake
250 grams Dried Fruit
125 milliliters Apple juice

Preparation steps

Bring the vinegar and 1/2 liter (approximately 2 cups) water to a boil. Add the diced onions, spice and sugar. Let cool then pour over the meat and marinate for 2-3 days.

Strain the marinade. Pat the meat dry and season with salt and pepper. In a large roasting pan, melt the butter and sear the meat on all sides. Deglaze with 1/8 liter (approximately 1/2 cup) marinade then pour in the broth. Crumble in the gingerbread cookies and stir to combine. Cover and simmer for 1 hour 15 minutes. Bring the dried fruit and apple juice to a boil then set aside.

Remove the meat from the braising liquid and let rest, covered, for 15 minutes. Purée the sauce or strain. Add the dried fruit and simmer until plump. Slice the meat and serve with the sauce, boiled potatoes and cabbage, if desired.
