4 cups Vanilla ice cream (softened)
26 ozs fruit cake (sliced)

Preparation steps

1.
Line a deep 28cm x 18cm|11" x 7" tin with non-stick baking paper.
2.
Arrange half the cake slices in the tin, trimming to fit. Top evenly with the ice-cream.
3.
Cover with the remaining cake slices and cover with cling film and then foil.
4.
Freeze for at least 1 hour until the ice-cream is firm. Cut into squares to serve.
