Peel and rinse potatoes, cut into matchsticks. Place in a colander and rinse with cold water until water runs clear. Dry well.

Heat oil in a wide pan and cook potatoes until golden brown, few pieces at a time. Drain on paper towels, season with salt and keep warm in preheated oven at 80°C (approximately 175°F). Cut cheese into slices. Arrange potatoes on plates and top with cheese, garnish with dollops of cranberry jam and garnish with thyme. Serve.
