Rolled Chicken Crepes with Creamy Sauce

- For the chicken
- 2 tablespoons olive oil
- 2 Chicken breasts (skinned and cubed)
- 4 rashers Bacon (chopped)
- 1 handful Baby spinach
- 2 pancake (ready-made)
Chicken and Prawn Pancakes ... Substitute the bacon for cooked large prawns
Heat the oil in a pan and sauté the chicken and bacon until golden.
Lay out the pancakes on the surface and spoon over the meat, then top with a few spinach leaves. Roll up into sausage shapes and set aside.
Heat the coconut milk in a small pan and simmer with the spring onions and coriander for 5 minutes. Season with the soy sauce.
Spoon onto a plate and set the pancakes on top.
