- 4 Quince
- ½ inch ginger
- 3 ozs Apple juice
- 2 Tbsps honey
- 2 Tbsps butter
- 3 Star anise
- 2 Cinnamon stick
- 1 Vanilla bean

Preparation steps

Preheat the oven to 325°F.

Rinse and dry the quince. Peel, quarter and core and cut into slices or halves. Peel the ginger and grate finely. Place the quince in a baking dish. Split the vanilla bean lengthwise.
In a bowl, mix the apple juice with the honey, butter, ginger, star anise, cinnamon sticks and the vanilla bean and spread over the quince. Roast until the quince are soft, basting every so often with the pan juices, about 40 minutes Serve as desired with whipped cream.
