Preparation steps

Rinse the turkey breast and pat dry. Slit the turkey breast longitudinally, pull apart the slit edges and knock a little flat.

Peel the onion and cut into cubes. Saute the onion until translucent in a large skillet in hot butter. Remove from heat and set aside.

Chop the dried plums finely and puree together with the plum butter and sauteed onions in blender.

Season the turkey breast with salt and pepper, fill the plum mixture into the center of the slit and fold the edges of turkey breast. Wrap the stuffed turkey breast securely with kitchen string.

Heat the oil in a roasting pan and sear the stuffed turkey breast in it all around. Add the mustard and the rosemary, and pour the poultry stock.

Place the roasting pan in a preheated oven and simmer at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 1 hour, basting the turkey breast repeatedly with the gravy.

Remove the roasted turkey breast from the oven, sprinkle with lemon and orange zests, and garnish with rosemary. Serve sliced ​​on a plate.
