Roast Pork with Pistachio Filling
Preheat the oven to 200°C (approximately 400°F).
Soak rolls in water. Cut the ham into cubes and mix with the lemon zest, sausage meat, eggs, pistachios and squeezed-out, torn rolls. Season with salt, pepper and allspice.
Rinse the roast, pat dry, lay flat and fill with the meat mixture. Roll and place on an oiled baking sheet. Top with the butter and roast in preheated oven on the lower to middle shelf for 1 1/2-2 hours. Turn halfway through cooking and baste with a little veal stock. Slice and serve.
