1 kilogram roasted pork roulade (Ready to prepare without rind)
salt
peppers
600 grams Plum
½ tsp ground cinnamon
½ tsp ground cloves
1 pinch ground allspice
2 Tbsps clarified butter
2 onions
¼ Celery root
400 milliliters Beef broth

Preparation steps

1.

Preheat oven to 180°C (approximately 350°F).

Rinse meat, pat dry and season with salt and pepper.

3.

Rinse plums, cut in half, remove pits and finely slice into thin strips. Mix half the plums with half the spices, spread over the meat, roll, tie with kitchen string and season salt and pepper.

In a roasting pan, melt butter and sear meat until golden brown.

Remove and set aside.

Peel onions and cut into wedges. Rinse celery and cut into chunks.

Add onions and celery to roasting pan and saute for a few minutes. Place meat back in, pour in broth and roast for 60-70 minutes in oven. Baste roast occasionally with broth.

8.

When half of cooking time has gone by, add remaining plums and spices to pan.

9.

Remove roast from oven, remove kitchen string, cut into slices and serve with roasted plums and vegetables on plates.
